When I tried this recipe I added Szechuan pepper quantity wrongly and it became too hot. But after my first attempt gone wrong, I tried the same recipe with less pepper and it tastes just perfect. Maybe the recipe name sounds too spicy and hot but really you can minimize or add more spiciness or hotness by adding more or less spicy Szechuan pepper as per your taste.

Actually, the recipe accidentally is done by me. One day I was preparing a mushroom curry and by mistake, I added some Szechuan pepper in it. I thought to add black pepper on it but I picked the wrong paper bottle and added the spices to the dish and when I realize I tried to make up the situation and to minimize peppery hotness I added some tomato ketchup into it. And OMG! when I taste the dish it just tastes great. Then I realize that I have invented a simple and easy-quick tasty mushroom recipe. That was a great experience.
I thought it would be so spicy and hot and for the reason, my son will not eat this. But after one bite, he told me it’s spicy but not hot, It’s like more sweeter than hot. Maybe because of the tomato ketchup. The dish looks extremely red in colour but tastes sweeter and peppery. The soft mushroom will just melt in your mouth when you will eat this. I find this veg dish just tastes perfect with a bowl of hot steamed rice only.

What Spices I actually used in the recipe
As I told before when it accidentally made by me for the first time I used Szechuan pepper in this recipe. It’s the key ingredient of the dish and also I used Tomato ketchup to minimize the hot peppery-ness of Szechuan pepper. But when I made the dish for the second time I just added new flavour to the dish. I added some Typical Chinese flavour like soy sauce and sesame oil to the dish. This Chinese flavour balances the spicy flavour of the mushroom dish and makes all the mushrooms more delicious.
I used the brown button mushroom in the dish but you can use white button mushroom to make the dish if you don’t find a brown one. One recommendation is, always to use button mushroom only for this recipe. Other kinds of mushrooms have their own earthy flavour which does not go well with the flavours we used here. And never cut the mushrooms in pieces to make the dish which doesn’t look good after cooking. Only use button mushroom tops for the dish as I did.
