Authentic Rogan Josh Recipe with lamb | Easy Spicy Lamb Curry

Rogan josh is a lamb or Indian goat(mutton) recipe from Kashmir region of India. This is an authentic rogan josh recipe which I Got from a restaurant cook who belongs to a small village of Kashmir. This recipe is very common in almost every non-vegetarian Indian restaurants. Not only in India this recipe is also very popular among foreigners.

Is this is an Authentic Rogan Josh Recipe?

Though I am confidently saying this recipe is authentic, maybe be you are not believing in it. For this, I  want to tell you a true story about this recipe and my cooking experience with it. When I just passed out from college This is the recipe which I first cooked. That time I had no knowledge about cooking at all. I tried the dish in so many restaurants and the tastes and the rich Red colour of the dish attract me so much. I tried the recipe so many times But I failed to achieve the exact taste and the Rice colour. Then I stopped cooking it. One day one of my Nepali Fried told me she knows a Kashmiri girl who belongs to a small village “KALAN“.This village is located in Jammu and Kashmir. The Kashmiri girl was a hotel management student at that time. She cooks really well. One day she cooked so many dishes for us and fortunately “ROGAN JOSH” was one of them. When I tried the dish I found that the taste was much better than the rest restaurant recipes. And So then I requested her to give me the recipe, she told me the recipe belongs to her Mom’s family. Her Mom exactly cooks as same as she cooked. And after a long time, I got the original Recipe Of Rogan Josh.

Why am I making this Rogan Josh?

This dish I make as dinner for my family. Sometimes I cook the dish for special guests. And everyone told me that the dish is delicious. My family love to eat it. Their complements of This Rogan Josh always Inspire me more to cook the recipe.

I am making this recipe with Indian goat meat /Mutton which almost tastes same as lamb meat but it can be made with chicken as well.

It’s a well known Indian recipe which is all most available in Indian restaurants  abroad

It’s a bit hot and spicy recipe.

But I am sure the flavour of the spices of this recipe will attract everyone and will not burn their mouth with hot spices.

Ingredients
  • 500 gram Lamb or Indian Mutton
  • 2 Tbsp Mustard Oil
  • 1/2 cup Fried onion flakes
  • 1 big Tomato puree
  • 1 Tbsp Dry ginger powder
  • 1 Tsp Garlic paste
  • 1 Tsp Turmeric powder
  • 1 Tbsp Sweet Paprika powder
  • 2 Pinch Asafoetida powder
  • 1 Tbsp Fennel seed powder
  • 1 Tbsp Rogan josh Garam masala Powder
  • 1 Tbsp Salt
  • 1 Pinch Sugar
  • 1 Cups Hot Water
  • 2 Tbsp chopped coriander or cilantro leaves

  • 1 Tbsp Sweet Paprika powder
  • 2 Pinch Asafoetida powder
  • 1 Tbsp Fennel seed powder
  • 1 Tbsp Rogan josh Garam masala Powder
  • 1 Tbsp Salt
  • 1 Pinch Sugar
  • 1 Cups Hot Water
  • 2 Tbsp chopped coriander or cilantro leaves

Instructions
  1. Place a wok/kadai on gas flame…
  2. Put Mustard oil on it and heat.
  3. Add the lamb to the wok and fry on high flame for 2 minutes.This process will lock all the juices of the lamb inside it.
  4. Now add Fried onion flakes and Asafoetida powder mix all the spices with lamb or Indian mutton and fry for 2 mins in slow gas flame.
  5. Then add Red chilli powder (Sweet Paprika) fry 2 sec.
  6. Then add Tomato puree and fry well until the raw smell of tomato goes.
  7. Now add Garlic paste and Turmeric powder.
  8. mix all the spices with lamb and Cook for 4 minutes or till oil starts separate from the spices.
  9. Then add 1 ltr of hot water into the Kadai or wok. then after quickly add Dry ginger powder, Fennel seed powder, Garam masala Powder, Salt, sugar, mix well.
  10. Now, wait for the bubble comes and just then quickly covered the wok/Kadai with a lid and slow the gas flame.
  11. covered the wok/Kadai with a lid for 1 hour or until the lamb becomes tender and Soft. slow the gas flame while frying lamp pieces.
  12. Now Kashmiri Rogan josh recipe with lamb meat is ready to serve.

Tips

Rogan josh garam masala powder-Need 1/2 Tsp. Cinnamon powder,1/2Tesp Green cardamom powder,1/2 Tsp ClovePowder, 1 big dry bay leave,1 big black cardamom pod,1 big whole mace. Blend all the spices in a spice blender to make a fine powder once it's ready you will get your own Rogan josh garam masala for the recipe.

Always make the garam masala fresh just before every recipe.
