Ingredients
  • 2Cup Short grain riceAny rice of your choice.Even can use Basmati rice no issue.
  • 1Cup Yellow moong dal/Lentil
  • 1/2Cup Diced carrots
  • 1/2Cup Fresh green peasOr Frozen
  • 1/2Cup Diced culiflower
  • 1/2Cup Diced potatoes
  • 1Tsp Grated Ginger
  • 1/2Tsp Asafoetida
  • 1Tsp Turmeric powder
  • 1Tsp Ground Cumin seeds
  • 1Big or small Bay leaf
  • 1Tsp Whole Cumin seeds
  • 2Tsp Saltor salt as per your tast
  • 1Tsp SugerOr any sweetner of your choice.even you can use stevia as well.
  • 5-6Cups Hot Water
Instructions
  1. Take a soup pot.
  2. Put all the Rice,dal/lentil,potatoes,carrots,green peas,cauliflower,salt,sugar,turmeric powder and 5 cups of water.
  3. Close the pot with a lid and boil all the ingredients for 20 mins over the medium heat.
  4. Just after 20 mints open the lid of the pot and check.If the all vegetables,lentil and rice can be easily smash by a spoon that means alls are cooked now turn off the flame. Add more water if required.
  5. But if Vegetables,rice or dal any of one is hard to smash that means it’s undercooked. Then cook all the ingredients like the same way for few more minutes.Add more water if required.
  6. Oce all done well then make a another frying pan heat enough and now put 1 Tbsp ghee or butter or olive oil to the pan over the low heat.
  7. Just then every quickly add Asafoetida,Whole Cumin seeds,Bay Leaf,grated ginger to the pan fry just for 2-3 mints over the very low heat.
  8. After 2-3 mins pour the frayed mixture over the pre boiled rice,dal and vegetables.
  9. Mix well all the ingradients.Now the super food one meal Khichdi is ready to serve.
  10. I like to serve this dish as hot as possible with some ghee and deep fried aubergine slices.You can d like me or can eat just like it is.
