Because Arabic people use dried black lime and saffron in their Kabsa spice mix. I never roast my spices before blend. But if you want to you can roast all the spices in a dry pan without oil before make it blends in a blender. This roasting process will help to release the essential oils from the spices. And also will increase the incredible smoky aroma of the spices. Once the roasting process has done Remove the pan from the heat and allows the spices to cool enough. Once spices are cool you can blend the spices in a blender coffee grinder or in a mortar and pestle. Just after blend quickly transfers the spice mix to an airtight glass container with a very tight-fitting lid so that aroma of the spices can be intact.
If you store aromatic Baharat Spice mix. I will suggest storing in an airtight glass container in your spice cabinet at the kitchen.
