Chettinad is a city of state TamilNadu in India. The community of this south Indian region is Known by Nattukotai Chettiars among other citizens of India. This city or region of Tamilnadu has there own cuisine which is popular as Chettinad cuisine. This south Indian state region also makes freshly blend spices or masala at home like other Indians commonly do. Indian people always love to make their spices freshly ground at home. Because most of them believe freshly ground spices tastes great and always make the dish so special and delicious. And among of the others Indians I also believe In same. So I always make my spices ground at home, even the basic spices which I use in my everyday cooking.  Therefore I made Chicken Chettinad masala recipe at my home. This spice powder smells wonderful and Its a typical spice blend use in Chettinad chicken curry. I got the spice blend recipe from one of my friend who Lives there.

Why am I sharing this Chicken Chettinad masala recipe?

In Chettinad cuisine, a variety of ground homemade spices are used. This Masala or ground spices is extremely popular all over India. Chettiars makes so many different types of spice mix for Veg and non-veg curries. They never use  The same spice mixes or masalas in their every curries or stew. Most of the spice mixes of Chettinad region is made for vegetarian dishes only. But because of the Influence of Malabar food cuisine, they started to make spice blends or masalas Typically use for meats and poultries. This chicken Chettinad masala is very famous among non-veg spice mixes or masalas. I saw so many times people sharing this masala or spice blend recipes in there way. As I got the recipe from a very close friend and the same she got from her Owner who is a Chettiar. So I believe It will be more authentic. So I decided to share the recipe with you all so that you also can make a perfect chicken Chettinad curry. Without a perfect authentic Chettinad masala powder you can’t make an Authentically tastes Chettinad chicken curry.

And I am giving all the spice names and pictures here so that it will be easy for everyone to understand what spices I used and how all the spices actually looks.

How to store the Freshly ground spice blend for a long time?

Chettinad masala powder is very easy to make at home. As I told before every spice powder mix can be made at home easily. So, I will give you the authentic recipe for this spice powder. This spice powder you can store in refrigerator or in a cool dark dry place for 8 months.

My suggestion is if you store this spice powder in a glass jar. Then the aroma of spice blend will be intact for a long time.

  • 1 Tsp Kashmiri sweet Red Chilli
  • 1 Tsp Cumin seeds
  • 1 Tsp Coriander seeds
  • 1 Tsp Fennel seeds
  • 1 Tsp Black pepper corns
  • 1 Tsp Mustard Seeds
  • 2 Tsp Fresh/Frozen Shredded coconut
  • 1 Big Star anise
  • 4 Pod Green Cardamom
  • 3 Pod Cloves
  • 1/2 Inch long Cinnamon stick

Instructions
  1. Take a frying pan.
  2. Make the pan hot and then put all the ingredients into the pan.
  3. Dry roast all the spices in a low flame for 2 mins.
  4. Then blend all the spices with the help of a blender.(But Don't Add water to the blender jar)
  5. Once the spice powder is ready to store it in an airtight jar.
  6. Self-life of this spice powder is 3 months.
  7. Do not need to store this spice powder in the Refrigerator.
If you Want to Dry Roast this spices In Microwave or Airfryer
  1. Preheat the Microwave or Airfryer in 60 Degree for 5 mins.
  2. Take a micro safe bowl or dish.
  3. Put all the spices into the bowl or dish and spreading out the spices on it.
  4. Put The bowl/dish into Microwave or Air Fryer for 1 Mins at the same temperature.
  5. After 1 mins stir the spices with a spoon and again start the microwave for 1 mins at the same temperature.
  6. After 1 mins blend all the spices with the help of a blender and make a fine spice powder.
  7. Store all the spice powder in s airtight jar.(But Don't Add water to the blender jar)
  8. Do not need to store this spice powder in the Refrigerator.
  9. Self-life of this spice powder is 3 months.
