This my way to make Mexican Cochinita Pibil Recipe. Though in Mexico they make the recipe with pork meat But I made it with lamb meat. Just to invent how the taste will be with the lamb meat. And believe me, it tastes just awesome. If you are a lamb or goat meat lover, try this. I also made this recipe with pork which tastes great. Actually, I like both types of meat for this recipe. The choice up to you which meat you are selecting for this recipe. I didn’t make this recipe with beef meat so I don’t know how the taste of this recipe with beef meat. But one thing I can assure you whatever meat you select if you tried my recipe step by step to make it, No doubt the taste will be 100% awesome guarantee.

What is Cochinita Pibil recipe?

Cochinita Pibil is a pulled pork kind of slowly roasted meat dish. This recipe belongs to  ‘Yucatan peninsula’. Meat marinated in Mexican spices and acidic fruit juice slow roast for the long time wrapped in banana leave usually known as Pibil dish. The recipe sounds Interesting, right? Don’t you think the recipe is tough to make? Not at all. It’s just simple like you make your grill dish or bbq dish. It is just like that. If you are organising a big BBQ party at home then this recipe is for you. Mexican traditionally make this recipe with a whole baby pig. But A whole baby Pig means lots of meat which is a lot more for a 4 person family. But don’t worry you can make this dish in the traditional way with a small part of the meat also. The taste will be as same as the traditional one.

Why is this Slow roast meat Cochinita Pibil recipe is different in taste?

Meat marination in highly acidic juice is actually the main cause of the different taste of the dish. Traditionally though Mexicans make this dish with a special kind of orange and lime or lemon juice. But I made it in a simple way. I used just normal fresh orange juice and fresh lime juice to marinate the meat. Which is not create any difference in taste. Fruit juice is not only the prime ingredient of the dish. The Achiote seed is another special ingredient of the dish. It’s a Typical Mexican spice which gives the orange-red colour to the dish. But the main problem is this achiote seed is not a common ingredient or spice you can easily get from the supermarkets.

So, I find out an alternative of the natural colour for the dish. I just hot the oil and then turn off the gas oven and very quickly I put the sweet paprika powder into the oil. Keep it aside for the marination. This process will give the orangish traditional colour to the dish during the marination process.

What can you eat with this Tasty dish?

It tastes great with homemade tacos or corn tortillas. I made the tacos at home and served this dish with. I will share the homemade easy taco recipe also later. You can also make it or you can make a burrito or sandwich with this. All combination go just great with the dish. You also can eat this dish with any salad of your choice.

  • 500 Grams Lamb or Goat meat with bone
  • 5 Cloves of garlic
  • 1 Tsp Whole Cumin seeds
  • 1 Tsp Whole coriander seedsor cilantro
  • 1 Tsp Whole Allsspice
  • 1/2 Tsp Fresh or Dry Thyme
  • 1/2 Tsp Whole black peppercorn
  • 1/2 Tsp chipotle chili paste
  • 1 Big Bay leaf
  • 1 Tbsp Chopped Cilantro or coriander leaves
  • 2 Tbsb Fresh Tomato juice
  • 2 Tbsp Fresh orange juice
  • 1 Tsp Fresh Lime juice
  • 1 Tsp Salt
  • 2 Big Peice of banana leaves or aluminium foil sheet For wrapping the meat
  • Take hot pan put 1 tsp of oil into it.make the oil very hot then very quickly trun of the flame. Just after few secounds add 1 tsp sweet paprika powder to it and make the oil cool to use it in next step of the recipe.It's a must have ingredient for the recipe. Actually it's a Substitute of  achiote seed which is a important ingredient to give it the original colour of the dish

Instructions
  1. Take a dry frying pan and make the pan hot. And put all the dry ingredients into it like, cumin seeds, coriander seeds/cilantro seeds, Allspice and peppercorns, bay leaf. Dry roast all the ingredients and ground them in a coffee grinder.
  2. Now take a big blender jar put other ingredients, ground powder and salt into it(except the banana leaves and meat. Blend all the ingredients make a smooth paste like constancy. Now the marination is ready for use.
  3. Now take a big bowl and put meat and marination into it and mix well. put the whole marination with meat in the refrigerator ONE NIGHT BEFORE OF COOKING. If you have a no time to marinate it for a long time just marinate it for 2 hours before the cooking. But if you want the best flavour to marinate it for 24 hours before cooking.
  4. At the cooking day remove the bowl from the fridge before 2 or 1 hours of cooking. The meat should be normal in temperature before start grilling. Now wrap the meat in the banana leaves or with the aluminium foil. and grill the met in a BBq griller for just 30 minutes.
But if you don't have a BBQ Griller
  1. Take a deep frying pan or cooking pot. Place The warped meat into it, Cover the pot and roast it in very low flame for 45 minutes and add 1 tsp of hot water after every 10 minutes to prevent the meat from burning. Flip the meat during this 45 minutes time. And cook the flavour from both sides.
  2. After 45 minutes your RRoasted Cochinita Pibil will be Ready to eat. It this with the taco, Tortilla or with anything else. Enjoy the dish and fall in love with its flavour. I am sure you will.
